Our Bolognese is a classic beef ragu, relying on gentle, slow cooking to bring out the inherent sweetness of its carrot, onion and celery soffrito base, then a long simmer with tomatoes, herbs and red wine till it's thick and rich. Perfect over pasta, polenta or gnocchi.
